National CHOCOLATE Day…enough said!

Chocolate. Who doesn’t love it? National Chocolate Day is July 7th and we hope that you can celebrate this very chocolatey day by indulging in your favorite sweet! Whether that be anything from chocolate chip cookies to chocolate cake it’s all going to be worth it. My favorite sweet treat is my mom’s chocolate swirl cheesecake recipe! Check it out:

My family and friends were all very tired of cheesecake as I tried over and over to get this cheesecake just right.  I kept telling them it had low-fat ingredients and it wasn’t lethal to their efforts to keep the pounds off, hence its name.  As a true chocoholic, I’ve adopted the motto, “If it’s not chocolate, it doesn’t count!” When deciding who will bring what to a potluck, I’m just assigned to,“bring the chocolate.”

Semi-lethal Cheesecake
Mary Guinane 

3 (8 oz.) packages of low-fat cream cheese, softened        

1 cup sugar, divided                                                       

½ cup no-fat sour cream                                                 

2 ½ teaspoons vanilla, divided

3 tablespoons flour

2 eggs

2 tablespoons butter, melted

4 ½ tablespoons cocoa

Prepare crust and set aside.  Heat oven to 450º.  In large bowl, combine cream cheese, ¾ cup sugar, sour cream and 2 teaspoons vanilla.  Beat on medium speed until smooth.  Add flour 1 tablespoon at a time, blending well.  Add eggs and beat well.

In a small bowl combine melted butter, cocoa, remaining sugar and vanilla and 1 ½ cups of cream cheese mixture.  Blend well.

Spoon plain and chocolate mixtures alternately into prepared crust.  Ending with dollops of chocolate on top.  Gently swirl with a knife for a paisley effect.  Bake for 10 minutes and then decrease temperature to 250º and continue baking for 35 minutes.  Remove from oven, loosen cake from rim of pan with a knife.  Cool completely.  Remove rim.  Cover and chill before serving.

Graham Nut Crust:

Heat oven to 350º.  Melt 5 tablespoons butter.  In a small bowl, stir together 1 cup chocolate graham cracker crumbs, 1 cup finely ground pecans and 1 tablespoon sugar.  Blend in butter, mixing well.  Press mixture into bottom and one inch up sides of a 9-inch springform pan.  Bake 8-10 minutes.  Cool.
